Leora Klingelhoets: Cassava SoupOrigin: West Africa Period: TraditionalThis is a very traditional type of West African 'soup' (stew) that's essentially made from mixed carbohydrate sources (and served with rice!). Meat is involved, but it's there more as a flavouring than a protein source. This is a 'country' soup so that it's made from whatever's available at the time. However, the mix of carbohydrate sources is the important factor in the making of this soup. This is one of my wife's traditional recipes and is influenced by the spices of Nigeria. Ingredients8â"10 Scotch Bonnet chillies, made into a paste1 kg lamb pieces on the bone, cubed100ml strong beef stock (or 2 stock cubes in 100ml water)1 tsp salt1 tsp black pepper1/4 tsp sumac (optional)0.5kg cassava (peeled and cut into large chunks)0.5kg yam (peeled and cut into large chunks)3/4 kg sweet potato, peeled and cut into large chunks (red is best)3 large plantains, peel! ed3 onions, roughly chopped3 *ehuole seeds6 uzazi peppercorns3 large sardines, baked2 dried fish fillets3 tbsp red palm oil (optional) Begin by pounding the uzazi and ehuole to a powder in a pestle and mortar. Add the chillies and pound to a paste then add 3 onions and pound those in. Dry-fry the meat in a non-stick pan for a couple of minutes then add the remaining onion and the chilli paste, along with 1.5 l or water (including the stock). Bring the water to a boil then reduce to a simmer. Meanwhile, soak the dried fish for about 20 minutes and prepare the sardines by removing the skin and bones and add the flesh to the broth. Strip the flesh from the dried fish as best you can and add this to the stew as well. Now add all the remaining ingredients to the stew (the cassava, yam and sweet potato should be cut in roast potato-sized chunks), bring back to the boil, reduce to a simmer and cook for 80 minutes, stirring occasionally. At the end of this time add about 3 tbsp red! palm oil (if desired) and cook for a further five minutes, st! irring frequently. This dish can be eaten on its own or can be served with rice. *Ehuole is a Nigerian seed used as a spice. The flavour is both aromatic and citrusy with a peppery overtone. It;s a very interesting spice that you probably won't be able to find outside West Africa. I've found that a mixture of 1 tsp ground black pepper, 4 tsp dried lime peel ground into a powder makes an acceptable substitute. Use 1 tsp of this mixture in place of each ehuole seed. Okra and GreensOrigin: Central Africa Period: TraditionalOkra is one of the few foodstuffs native to Africa to have attained world-wide penetration. It is used throughout Africa, the Middle East and Asia due to its mucilaginous qualities when cut, as this aids in the thickening of soups and stews. Ingredients1 onion, chopped2 tbsp palm oil (or groundnut oil with added paprika)500g mixed greens (any of cassava leaves, kale, collard greens, sweet potato leaves, sorrel leaves) washed and with stems removed20 okr! a500ml nyembwe sauce or palm soup base3 green chillies, chopped250ml water Add the oil to a large pot and fry the onions until translucent. Add the water and bring to a boil. Now add all the remaining ingredients and continue cooking gently until the greens are tender. Stir often to prevent burning. Spicy OkraOrigin: India Period: TraditionalIngredients2 Bird's eye Chillies1 tsp Black Cumin Seeds1 tsp Black Mustard Seeds300ml Coconut Milk1 garlic clove, crushedjuice of 1 lemon300g Okra, 'topped and tailed'2 tbsp Vegetable OilGently heat coconut milk together with the okra in medium saucepan and cook until the okra is tender (about 7â"8 minutes). Meanwhile, heat the oil in small frying pan and brown the chillies, garlic and spices until the seeds crackle. Pour over the okra and add lemon juice. Place the bowl containing the okra ! and water in a refrigerator and leave for 2 or more hours.Remove the bowl from the refrigerator and drain off the salt water. Season the cornmeal with the salt and pepperPlace the sliced okra together with the seasoned cornmeal in a large plastic bag and shake until the okra is well coated with the cornmeal.Heat some oil (1/2 inch deep) in a frying pan until it begins to shimmer. Place the okra in the pan and fry until crisp and brown.Remove the okra from the oil, using a slotted spoon and drain on paper towels. Marco Stolarz: I'm not very educational about how much attention span there is in an autistic child, but I can tell you what keeps my kids entertained and I'm sorry if I'm not very helpful but:1. A small child's laptop. They help children learn and are fun for the kids2. A Leapster book that talks and is interactive.3. Kids sing-alongs. Like the Itsy Bitsy Spider where you show the child the hand motions and everything. My kids LOVE these.4. The Surprise Ink notebooks... the ones that show you the picture only when you use the special marker.I'm not a personal fan of the DVD player in the car, but if it works, I say go for it.I hope this helps. Nell Dipiero: Children tend to get bored when they are tied to the car chair, they start make all sort of mess in the back to get out of t! hat chair, which distract us a lot. What I did was that I got some travel toys for my kids. These toys can be used for long drives as well as short ones since they will entertain him the whole way, and are educational which I thought was an upside to these toys especially, I leave you a link so that you can find them and hopefully they will be as helpful to you as they were to me....Show more
Janita Tetlow: sounds like my sisters boy. she would be driving down the road and he would be getting in to the front seat he is three. they have things u can put on her carseat that she cant get undone. u might try that. also try putting the windows down sounds like car sickness. i get that sometimes as soon as i get out of the car i am fine. try soft kids songs. but also mom when u go to the car dont make a big deal out of it or get so freaked out that before u even start u dont want to leave. just be clam and she should stay clam. i had to drive nine hours with a one year old! that hates his carseat for more then ten mins and with a four! year old dog. we made it in ten hours two states without my husband. it took alot of milk and cookies snack and a 300 dollar dvd player. and five dvds. we had elmo in but he got too overwellemed with them i get baby-faith movies ilove them they are soft but are hand pupets and my son loves the color all bright and they are of animals and little people from the bible. and with your daughter being autistic that might keep her mind busy for a while. also have u ever tried talking her through the ride. if she can ask her what she sees around her. what she likes. what colors she sees. what new things she sees. also i would talk to her doctor about this if not someone that has a kid her age that is autistic they might be able to help better sorry i dont know much about it. i hope u can find a way and i hope your pregnancy gos great....Show more
Emery Blando: First, I would start researching car seats and try to find one that she won't be able to unlatch herself. Britax ma! kes a car seat that goes up to 65 pounds, and I know there are others for older/bigger kids.Second, I would sit back there with her so that you can stop her from unhooking her car seat straps. If you are not physically able, maybe you could drive and her dad could sit next to her.Third, I would make up a car ride bag. Fill it with random things to entertain her. Rotate the toys that you keep in it, so that she is constantly surprised and therefore looks forward to looking in the bag. Tell her she can take something new out every couple of minutes if she sits nicely. Make a trip to the dollar store so that you have lots of new little things to put in it. I would try books, crayons with coloring books, toys, even an mp3 player (got my son one for $10 for the bus) so she can listen to music or stories on it, anything that you think might get her attention for a few minutes. Gage how many things to put in the bag by the length of the trip. Make sure she knows this is a! special "trip bag" and that the toys in it are ONLY for the car. This! will give her something to look forward to. If you make the mistake of letting her have the bag outside of the car, the "magic" will be gone and it won't help you. Good luck!...Show more
Catheryn Small: Create an activity bag for her! If she has things to do she will be less likely to scream and fuss! This does not mean she won't get board! Try giving her rewards for good behavior at the end of car ride! Bribing wont work and shouldn't be done! Its better to make it a fun game to when she does not cream the entire ride she gets a sucker! It will take time and like I said there will be times she screams and howlers anyways! I have experience with this because I drove school buses for a long time and I had this one little boy that would scream the entire ride! He had to be restrained and hated it! It was school bus policy that since he had special needs to be restrained! I tried everything and the bag of stuff for him to do and the rewards seemed to work best! Also I! kept him close to my seat so he could talk to me during the ride! If your playing music you may want to turn it off during one or two rides and see if that improves her behavior! I had autistic kids on the bus that could not stand noise! Unfortunately for the other kids the only option was to not have the radio on! If you don't play the radio try when at home finding music that she likes and is soothed by and play that in the car ride! Maybe also put the car seat in the house too during the day! Place it in the play area to where she can sit on it and touch it regularly so its become more of a familiar object! Well those are my idea's and hope they help you out! Good luck!P.S. Natalya Sydney: I frequently drive my niece to and from preschool, and she has similar issues with respect to patience and confin! ement. What has worked well for me is to bring a flat board, a multicol! oured pencil crayon and paper. Then I tell her to draw me a picture of something pretty we may have just driven by, like a tree or person waiting at a bus stop. Then when she shows me the picture, I point out something else we passed. Soon she has drawn me 3-4 pictures and we are at our destination. Hope it works for you too!...Show more

Julee Lanham: Have y! ou all tried singing together. My son loves it and it even keeps my 8 month old quiet on long car rides. Burn a cd of kid songs and just sing along and act silly. Possibly play games in the car, like I spy. Maybe get her a portable dvd player she can hold on to in the back seat...they make ones that will plug right into a cigarette lighter/adapter in the car.

Grease and flour two 8 inch round pans. Mix together the flour, baking powder and salt. Set aside. In a large bowl, cream together the butter and sugar until light and fluffy, about 5 minutes. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Pour batter into prepared pans. Bake in the preheated oven for 30 minutes, or un! til a toothpick inserted into the center of the cake comes out clean. Allow to cool in pans on wire racks for 10 minutes. Cook over medium-low heat, stirring constantly with a wooden spoon, for 5 to 6 minutes, or until the mixture turns opaque, thickens, and coats the back of the spoon. Do not let the filling boil, or it will curdle. Pour the mixture through a fine mesh sieve into a medium bowl. Stir in t! he lemon zest and allow the filling to cool. Cover with plastic wrap, pressing directly onto the surface, and refrigerate for 1 hour, or until chilled. In a clean bowl of the electric mixer, using the whisk attachment or beaters, beat the heavy cream on high speed until soft peaks form. Remove the lemon filling from the refrigerator and whisk until smooth. Using a rubber spatula, gently fold the whipped cream into the filling. Cover the bowl and refrigerate the filling until ready to assemble the cake. To make the frosting:In the large bowl of the electric mixer, using the paddle attachment or beaters, beat the butter on medium speed until creamy, about 30 seconds. Gradually beat in the confectioners' sugar on low speed. Add the cream, lemon juice, vanilla, and lemon zest. Increase the speed to medium-high, and beat for about 3 minutes, or until the frosting is light and fluffy. To assemble the cake:Trim the tops of the cakes so they are flat. Place one cake layer on a serv! ing plate. Pile the lemon filling onto the center using a small offset ! metal spatula, and spread it into an even layer, leaving a 1-inch border around the edge of the cake layer. Top with the second cake layer. Frost the top and sides of the cake with the lemon frosting. (If some of the filling oozes out from the middle, just blend it with the frosting around the sides of the cake.) Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 inch round pans. Mix together the flour, baking powder and salt. Set aside. 2. In a large bowl, cream together the butter and sugar until light and fluffy, about 5 minutes. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. 3. Pour batter into prepared pans. Gradually add 1/2 cup of the sugar, beating until stiff glossy peaks form. Set aside. Cream butter or margarine, 1 1/2 cups sugar, egg yolks, lemon zest, and lemon juice tog! ether until fluffy. Add flour mixture alternately with the yogurt to the egg yolk mixture. Gently fold in the egg whites and pour the batter into the prepared pan.
